Cabernet Sauvignon Aracuri Vintage 2008

WINEMAKING: Made with grapes from our own vineyards, located in a cold region, municipality of Muitos Capões, with an altitude of 960 m. The high altitude prolongs the maturation phase which is favorable to the production of pigments and aromas. The conduction system is on trellis (espalier), spur-pruned cordon system, with low yield of 8 tons/ha. The harvest was manual, with selection of clusters. The winemaking process used was traditional, but only with de-stemming of grapes, with the addition of selected yeasts and fermented with controlled temperatures around 26ºC. Time of maceration was about 10 days, until to the end of the alcoholic fermentation. Stabilization and maturation only in stainless steel tanks.
