Aracuri Collector Cabernet Sauvignon Vintage 2008

WINEMAKING: Our 2008 vintage delivers deep rich flavors by Collector Cabernet Sauvignon, made with grapes with excellent ripeness, from selected blocks of our own vineyards, located in a cold region, municipality of Muitos Capões, with 960 m of altitude. The high altitude prolongs the maturation phase, which is favorable to the production of pigments and aromas. The conduction system is on trellis (espalier), spur-pruned cordon system, with low yield of 8 tons/ha. The harvest was manual, with selection of clusters. The vinification process was traditional, the grapes were only de-stemmed, with the addition of selected yeasts and fermented with controlled temperatures around 26ºC favoring a slow and delicate extraction of the components of aroma and color. Time of maceration was about 10 days, until to the end of the alcoholic fermentation. The aging of 1 year in oak barrels has added complexity and sweetness.

ALCOHOL CONTENT: 13.5%Vol.

AGING: A year in oak barrels and 6 months in bottle.

ESTIMATE OF THE AGING: 5 to 7 years.

ORGANOLEPTIC CHARACTERISTICS: The wine presents clear, bright, red color with high intensity. The flavor protrude special features of the Terroir, with an intense aroma of ripe black fruit, cassis and blackberry well-integrated toasted flavors such as coffee, chocolate, tobacco, and spices, elegant in the mouth, with nice initial attack, rounded, concentrated, a lot of fruit followed by the gradual emergence of notes of vanilla and chocolate, with good body and balanced acidity, soft and bulky tannins, long and harmonious finish.

CUISINE: This wine is structured, balanced flavor that harmonizes with a variety of dishes such as red meat, game meat, pasta with strong sauces and cheese with a strong intensity of flavor.
